Cao Lau is one of the specialties of Hoi An which has typical feature of Pho Hoi. Cao Lau is made from rice flour soaked with water and ash from a special type of firewood on Cham island and cooked with water collected from Bá Lễ Well (the only ancient well from Champa Kindom that still exists in Hoi An Ancient Town). Cao Lau is served with char siu pork (chinese bbq pork). Cao Lau is special for not serving with broth but only two or three spoons of sauce from char siu pork which retains the rich and greasy taste. Cao Lau is also served with bean sprouts and raw vegetables from Tra Que vegetable village, lemon, chili, etc.
Cao Lau is recognized by the Asian Record Organization as a speciality with Asian Cuisine Values.
