Cao lau noodle


Raw rice is soaked in lye ash and ground with water from Ba Le ancient well to make the noodle dough. The ingredient is the Xa xiu pork, a style of roasted pork seasoned in a spice marinade of soya and served with vegetables from Tra Que villages. Cao Lau hoi an is the foremost traditional food in Hoi An. The Asian Record Organization has recognized Hoi An’s famous Cao Lau specialty as one of 10 dishes meeting the criteria of “Asian cuisine value”
